To make the peach syrup you will need:
400 g Peach (chopped)
200g sugar (1 cup)
200g water (slightly less than 1 cup)

To make peach syrup start by washing and chopping the peaches into small cubes while retaining the peel. Combine everything in a saucepan and start cooking at medium flame. After the sugar melts reduce the flame to simmer and let the peaches cook for 9-10 minutes or until they become mushy. Turn off the flame and let the syrup cool for 10 minutes. After the syrup cools a bit, pass it through a metal sieve and store it in a jar.

Tapioca pearls
For making this peach bubble tea I have used black boba pearls. They are made with tapioca starch and flavored with brown sugar. They become black on cooking, hence the name black boba. The brown sugar boba is most widely used and easily available.
You can use any boba of your choice. Mini boba, clear boba, rainbow or pastel-colored boba, or peach popping boba. The peach popping boba or popping pearls are filled with concentrated peach juice and is a great addition to bubble tea.
You can DIY Peach boba pearls at home. To make it, you will need peach sauce and tapioca starch. It is not a difficult process but a little tedious.

Whole milk
Bubble tea demands whole milk. It must be rich and smooth. Though we can always substitute it with low-fat milk, that will alter the flavor and texture of the peach boba. If you want to make it vegan, then use oat milk or soy milk.
Tea
I am using black tea in this recipe. You can use black tea, green tea, earl grey, or any other tea that you like. I like the flavor of black tea with peach. You can use a teabag of peach tea if you want.

This peach milk tea boba recipe does take some prep time as you need to brew tea, cook boba, and make peach simple syrup or sauce. But trust me it is worth it. I like to make peach syrup in large quantity and use it in numerous other recipes.
So, let us make this peach-flavored milk tea with tapioca pearls.
Step 1 Brew the tea
You can use any tea you like, as I stated in the ingredient section. I have used black tea.
In a cup, I place a tea bag and keep it aside. Then I boil 1 cup of water to make the tea. I switch off the heat when the water starts to boil and pour the water into the cup. To guarantee optimal tea flavor extraction, lift the tea bag 2-3 times in the cup to allow movement of the tea leaves. Then place a plate over the cup and steep the tea bag in the hot water for 3 minutes. Remove the teabag from the teacup and set it aside.
Brew tea ahead of time so that you have enough time to cool the tea.
Step 2 Make peach milk
What is peach milk? How to make it fresh at home?
Peach milk is simply peach-flavored milk that is very easy to make at home. Start by making a peach sauce or peach syrup first. It is best to make it in advance. (Find details in the ingredients section)
Add peach syrup to the measured quantity of milk. Mix thoroughly and set aside.
Store it in the fridge for 3-4 days and enjoy as such or make it into a delicious bubble tea whenever your heart desires.
Step 3 Cooking boba

Cook the boba according to the directions on the package. If you're using popping boba or jelly boba, there's no need to cook them.
Brown sugar boba is what I'm using. It is better to purchase boba that cooks quickly. I am going to flavor them with peach sauce.
Bring 3 cups of water to a boil. Then add ⅓ cup of black tapioca pearls. Allow them to cook at medium heat for 4-5 minutes, or until they float to the surface.
Further, simmer them for 5-7 minutes until they are fully cooked through. Then remove the pan from the heat and cover it, allowing the boba to soak for another 5 minutes. After that, strain the water and collect the boba that has been cooked.
Place them in a mixing dish. The tapioca pearls are then dipped in peach syrup. Brown sugar syrup is the traditional option. You can go for that if want. However, you can use any syrup you prefer. It is a crucial step to prevent the cooked tapioca pearls from sticking together.
Dipping the cooked tapioca pearls in peach syrup, give them a peach flavor and also prevents them from sticking together.
Step 4 Assemble the peach milk tea

To make the peach milk boba, start by putting the peach syrup dunked boba pearls into glasses. Depending on how much boba you want in your tea, add more or less. I normally use less boba in my tea because it is high in calories and contains a lot of starch.
Then, in each glass, add 9-10 ice cubes. Pour half a cup of brewed tea into each glass. Add the peach milk last. Place a boba straw in the mixture and stir briskly. If you like, you may also add cream to make it creamier. You can also add some chopped peaches.

To make vegan peach milk tea, just substitute the whole milk with plant-based milk that you like. Also, use vegan sugar instead of cane sugar for making the peach syrup. Follow the rest of the recipe as such to make the vegan peach boba tea.

I do not advise storing the assembled bubble tea. It is best served fresh. You can instead make the peach syrup, or peach milk days in advance. And cook boba right before you are ready to serve.
