The off-season peaches will not make a good syrup. In that case, choose frozen peaches. They have a better taste and flavor as they are picked and frozen in the peak season.
Nectarines taste just like peaches. Other than the firmness of texture and the lack of fussiness, there is not much difference. You can replace peaches with ripe and sweet nectarines.
As far as the peach varieties are concerned, you can use whatever is available to you. White peaches are sweeter and have more of a floral aroma. The yellow peaches on the other hand are more acidic but have an intense peachy flavor. Yellow or white peach, both work just fine for this recipe. All you need to ensure is that the peaches are sweet.
Granulated Sugar
I have used clean, white, fine sugar in this peach syrup recipe. If you are vegan, choose vegan sugar to replace the regular cane sugar.
If you want to use unrefined sugars instead of cane sugar, please note that these sugars have a deep flavor of their own, which will overpower the subtle peachy flavor of the syrup.
Hence, we should stick to granulated cane sugar.
🔪Instructions: How to make peach syrup?
Step 1 Prepare peaches
To make peach syrup start by washing and chopping the peaches into small cubes. No need to remove the peel of the peaches as that is where most of the pigment lies. We need those peels to make the syrup look orangish.
If you are using frozen peaches, skip to the second step.
Step 2 Cook peaches in sugar syrup.
Measure the chopped peaches, sugar, and water. Combine everything in a saucepan and start cooking. The sugar will melt in 2-3 minutes. Then reduce the flame to simmer, and let the peaches cook for 9-10 minutes or until they become mushy. Turn off the flame and let the syrup cool for 10 minutes. The exact time will depend on the firmness of the peaches. That is why I stress about using ripe peaches.
Cook the peaches at low heat, else the syrup will thicken before the peaches are cooked. If that happens, add a tablespoon of water at a time to fix the consistency of the syrup, while the peaches are still cooking.
Step 3 Strain, cool, and store
After the syrup cools a bit and becomes easy to handle, pass it through a metal mesh strainer. Place a sieve in a bowl or at the mouth of a jar. Using the back of a spoon or fork, press the cooked peach through the strainer to collect the peach pulp with syrup in a bowl or a jar. Let the syrup cool completely before closing the lid. If you are planning to can the peach syrup, use sterile mason jars to collect the peach syrup.

- Simple peach syrup : The recipe discussed above makes a thick syrup, but if you want you can make peach simple syrup. It is thinner and easier to mix in drinks. For that, you use 1 cup of water in this recipe instead of half cup. There is no need to check for simple syrup recipes, they just have a sugar to water ratio of 1:1.
- Sugar-free peach syrup: Use sugar free sweetener like powdered sucralose to sweeten the plain peach syrup.
- You can add some optional add-ins into the peach simple syrup to enrich its flavor. If you know what you are going to make with the peach syrup, you can add the herbs and condiments that will enhance the flavor of the recipe. A few suggestions to get you a starter are:

- If you are making a large batch, consider putting the bottles in an oven at 320 0F for 15 minutes to kind of sterilize them (jar or bottle).
- Make sure to close the lid tightly and refrigerate it. Thereafter ensure to close the lid tightly after every use.
