Which apple varieties are best to dehydrate?
When choosing the apples for dehydrating or making chips we need to consider two things.
- Sweetness. The apples that are sweet dehydrate the best. The dehydrated apples will taste sweet even without adding any sugar. Therefore, it is best to choose the sweeter apple varieties over tart or sour apples. Keeping that in view, I like to use Gala. They are one of my favorite apple varieties. You can also use Macintosh, Fuji, Honeycrisp, red, or golden delicious. For less sweetness, go with something like Granny Smith, Pink Lady, etc.
- How well they hold their shape when exposed to heat. Gala, golden delicious, and Macintosh stand the dehydration better than other varieties. They do not just hold their color, but also hold their shape on dehydration.
Ground Cinnamon
Ground cinnamon is the only key ingredient that we are going to use to flavor the apples. Though apple chips are good on their own, you do not need to add any kind of spice or flavoring. But if you do, it must be cinnamon.
Without a doubt, cinnamon goes great with apples. Just sprinkle a little bit of ground cinnamon on the sliced apples, and that should be all.
Other flavors and spices that you can add:
- Added sugar. Some people like to add sugar and cinnamon to their dried apples.
- You can add some nutmeg and allspice if you like.
- Just sprinkle some pumpkin pie spice mix.
- Cardamom powder is another option for exploring.

Mandoline slicer
We need a Mandoline slicer to make uniformly thin slices of apples. You can also use a knife, but we need rounds of the same thickness for making the chips. It is difficult to achieve uniform slices using a knife unless you are experienced in this.

I am using an 8 qt Bella professional air fryer for making the air fryer chips recipe.
🔪Instructions: How to dehydrate apples in air fryer?
Step 1 Cutting the apple rounds
To dehydrate apple slices in an air fryer start by choosing the right type of apple. Wash them nice and dry with a kitchen towel.
Now cut them as you like. You need a Mandoline slicer to slice them into thin rounds. You can cut them with the core or without the core. To remove the core, use an apple core or a melon baller. Alternately you can also cut the apple into halves and make it into thin slices.
Slice them into ⅛-inch thin slices, using a slicer.
Optional step:
You can soak the apple slices in salt water, lime water, or citric acid. This is just to prevent the apples from browning.
Why not soak the apple slices in salted water or citric acid?
- One, they alter the taste of the apple chips. Make them mildly sour or salted depending on what you used.
- Second, they further hydrate the apple slices. I find this step counterproductive. It makes the apples moister. Hence, they take longer to dehydrate.
If you speed up the process and do not let the sliced apples sit outside the air fryer for too long, you do not need to soak the apple slices in anything.
Sprinkle the ground cinnamon on the sliced apples and they are ready to go into the air fryer.
Step 2 Dehydrate apples slices in air fryer
Pull out the basket of the air fryer and spread the cinnamon apple slices. Slices of about two apples can be dehydrated in one batch in an 8qt air fryer. I like to place a pot pan stand on the apples to prevent them from flying around in the air fryer basket.
Set the air fryer temperature to 300 0F and let them air fry for 20-25 minutes. After every 6-7 minutes, pull out the air fryer basket, flip, and switch places. The apple slices getting brown at the edges of the basket should be moved towards the center and the center ones to the edges of the basket. This ensures even dehydration of all slices.
I suggest you work in batches. First work on 2 apples, slice them and put them in the air fryer basket. And when they are nearly done, then start slicing the remaining two apples. This will prevent them from browning.
🍎 How to make cinnamon sugar apple chips in an air fryer?
If you want to make cinnamon apple chips in an air fryer, slice them very thin, about 1/10 of an inch. Then, sprinkle them with cinnamon sugar. Then, gently lift one slice at a time and put it in the air fryer basket. Spread them in the basket or the rack (oven-style air fryer) without overlapping. Then, air fry them at 300 0F for 10-12 minutes or until they become fully dehydrated and crunchy. Do not forget to flip the slices in between to ensure even cooking.
🫙Storage: How to store dehydrated apples?
Let the air fried apple chips or apple slices cool completely to room temperature before storing. They should be stored in an airtight container in a cool and dark place in your pantry. I like to use glass containers.
If you store them appropriately in a clean, dry, and airtight container, they will last you months or even a year.
If the place where you live is hot and humid, consider refrigerating them in an airtight container.
You can also freeze the air fryer dehydrated apples. I like to put them in a zip lock bag and press out as much air as I can. They will freeze well for a year.

- Slices of about two apples can be dehydrated in one batch in an 8qt air fryer.
- Do not overcrowd the air fryer basket with all the apple slices. I suggest you work in batches. First work on 2 apples, slice them, and put them in the air fryer basket. And when they are nearly done, then start slicing the remaining two apples. This will prevent them from browning.
❓Frequently Asked Questions
Air fryers work at way higher temperatures than dehydrators. Therefore you do not need to wait for hours to enjoy the healthy apple chips or dry apple bits. Select the temperature of 300 0F and you should be able to dehydrate slices made from about 2 apples in 25 minutes or so.
When apples are done dehydrating, they will appear shrunk and wrinkled. They will be dry to touch and rubbery to feel. Just tear a slice to see if you can feel some sort of moisture on the inside. If not, the dehydrated apples are ready.
To dehydrate apples in the oven, spread them on a parchment-lined baking sheet. Then bake them in the oven at 200 0F for 1 ½ to 2 hours or until they dry completely. The actual time will vary from apple to apple and also on the thickness of the slices.
Food dehydrators work at very low temperatures to dehydrate food while preserving most of the nutrients that otherwise are lost during cooking. The ideal way to dehydrate apples is to use a low temperature of around 125-135 0F and let them dry for 10-12 hours.
It might take longer if apple slices are thicker.
