This Just Egg Omelette is one of my favorites Just Egg recipes. This omeletee is a real thing. It has the taste, texture, and aroma of a real chicken egg omlete. This healthy plant based vegan omelette with green beans and caramelized onions folded inside, is sure to become your favorite breakfast recipe.
You can enjoy it as such or use to build your favorite egg sandwich, using a vegan bread.

- Tastes like real eggs. This is the only vegan omelette recipe that tastes closest to the real poultry egg omelette. It checks all boxes.

- Plant-based. Now, what else do you want? A plant-based egg that tastes just like real eggs. This buddy is made up of mung bean proteins and soy proteins.
- Non- GMO. The mung beans and the other ingredients used are not genetically modified.
- Numerous possibilities for customization. You can use whatever topping or filling options you like.
- Vegans and non-vegans will enjoy this recipe equally.
- Way healthier than the eggs. It has an almost equal percentage of protein but contains 69 percent less saturated fat than the chicken egg .
- It is a Zero cholesterol omelette. What else do you want? Just Egg and vegan butter, both are cholesterol free.
- This is a gluten free recipe. I have not used flour and baking powder to make them fluffier.
What is Just Egg?
Just Egg is a plant-based egg, which is sold under the brand name Just Egg. Just Egg comes in a yellow runny paste form, which is made and flavored by numerous plant based and non-GMO ingredients. It is made from mung bean protein isolate and tastes very close to a poultry egg.
Just Egg is a really good vegan egg. It is a revolutionary product that makes great vegan omelettes, be it folded or filled (with veggies), vegan scrambled eggs, and all sorts of egg-based recipes.
Most egg substitutes do not taste like eggs, but Just Egg not only tastes like eggs but also acts as a great egg substitute for most baking recipes.
What is it made from?
The key Just Egg ingredient is mung bean isolate which gives it the body and texture of an egg. Mung bean or moong is a green-colored legume that is widely used as a lentil in India.
The flavorings come from dehydrated onions, turmeric, salt, and carrot extract. Turmeric and carrot extract are also responsible for the color. It also contains soy and tapioca starch.
Ingredients for making Just Egg Omelette
1. Just Egg
I hate stating the obvious. But for the record, yes, we need Just Egg. You can find them at most the grocery store these days. You will usually find them in the egg substitute section or somewhere around tofu and tempeh.
And yes, we need the raw Just Egg, which comes in the yellow bottle ( refer to ingredient image). There is a folded version of Just Egg that comes frozen, and we do not need that.
2. Green beans
You can use fresh or frozen green beans. I like to use thin green beans. I have extra thin beans in this just egg omelette. They cook faster and taste better than the standard green beans and have a tender texture.
If you are using fresh green beans, wash them and have them ready.
3. Onion
Though you can use whichever onion you like or have on hand. But red onions caramelize the best. They are the first choice, followed by yellow onions.
We need to slice them thinly.
4. Vegan butter
We need butter or oil. We need it to cook the veggies and grease the pan for an omelette. For greasing the pan to make an omelette you can also use cooking spray here. Cooking spray sticks to the surface of the frying pan and works better.
But I do not like to use cooking sprays, so I will be using a little bit of butter to grease the pan before pouring the Just Egg. I used Earth Balance vegan butter.
Also, if you are not vegan, use regular butter to sauté the green beans.
5. Spices and condiments
You can use whatever you like to flavor and spice the veggies. Plus you can use whichever combination of vegetables you like or have on hand.
I have used salt, freshly crushed black pepper, cumin seeds, and a pinch of chili powder ( just to balance out the sweetness of the green beans.)
You can use whichever combination of spices you like. You could go for garlic and ginger also. But trust me, this recipe is pretty good on its own. Do try it out as it is. This vegan folded omelette will not disappoint you.
Also, add some salt to the Just Egg paste as well. It has salt added to it, but I find it insufficient and I always add a pinch of regular salt or black salt to it.
Optional ingredients for Just Egg Omelette
Black Salt in Just Egg Omelette
It makes any fake egg smell like a real egg. The sulfur compounds present in the black salt impart a hard-boiled egg-like smell to it. So, whenever we are trying to create a recipe that tastes like eggs, black salt comes in handy. For instance, check out this scrambled tofu sabzi, where the intention was to create something that tastes like egg bhurji, where I have used black salt.
All-purpose flour and baking soda
Just Egg suggests on its website to use 2 teaspoons of all purpose flour and ⅛ teaspoon baking powder per half cup of Just Egg. It makes the omelette fluffier and thicker. But I have experienced that it also makes it brittle and difficult to flip without breaking.
I do use it when making scrambled eggs, but not when making the omelette.
Process: How to make a Just Egg omelette ?
Let us start to make a vegan omelette by using Just Egg in three simple steps.
Step 1 Prep vegetables.
Start by slicing the onions. Also, wash and cut the green beans if using the fresh ones. Remove the Just Egg from the fridge.
Step 2 Make the vegetable filling
Heat a 9-inch non stick pan frying pan on low flame. Then add vegan butter or cooking oil ( retain some for omelette). When the butter melts add the cumin seeds.
Once the seeds start to sizzle, add sliced onions. Stir and let them cook for a minute or so. Then add the green beans and stir. Sprinkle salt, black pepper, and chili powder and mix. Let them cook for 4-5 minutes while stirring occasionally.
Turn off the flame and remove it onto a plate.
Step 3 Make a folded omelette
In a small bowl add 1 cup of Just Egg. Add salt (or black salt) at this stage and mix well
In the same pan, add more oil or vegan butter. When it melts, lift the pan and swirl it to spread the butter all around the pan.
Now add half of the Just Egg mix (½ cup) to the frying pan. Then, swirl the pan to spread the mixture evenly.
Let it cook for 6-7 minutes at low medium flame until it becomes dry at the top. It will take some time, be patient. Do not expect it to coagulate and cook as fast as a normal egg. It takes some time. Do not try to flip the omelet until it is fully cooked.
When the omelette seems cooked through, add sauteed green beans and onion. Fold over and remove onto a plate.
Then repeat this step to make another omelette.
Serve hot and enjoy!

Mushrooms, spinach, Cherry tomatoes or Roma tomatoes, brussels sprouts, bell pepper, jalapeño, poblano pepper, green onions, leek, asparagus, broccoli, etc.

You can also fill your Just Egg omelette with sauteed Tofu, vegan sausage, tempeh bacon, vegan ham, sauteed TVP, etc.

Topping ideas for the Just egg omeletee
I like microgreens for adding on an omelette if I have them. You can also add some fresh herbs or red chili flakes. Or simply grate some vegan cheese. But if are in the mood for something extra, let me put down some suggestions to get you started.
- Herbs - Add some fresh herbs like parsley, green onion, chives, basil, dill, or cilantro.
- Sauces – Hot sauce, balsamic reduction, guacamole, garlic cilantro sauce, hummus, ketchup, salsa, etc.
Possible variations of Just Egg omelette:
This Just Egg omelet recipe is a single-fold omelette, more commonly known as the American omelet. You can also make French Omelette and frittata using the same ingredients.
1. French Omelette
French omelette are fluffier and are usually folded twice into a letter shape. You can also add the chopped extra fine green beans, onions, and rest of the spices into the Just Egg mix and make two veggies filled omelettes. Give folds from each side, one over another. Remove on a plate and serve.
2. Just Egg Omelette folded in bread.
To make this variation, one slice of bread will be folded into the omelet. When the omelet is cooked through, put a slice of butter toasted bread at its center and fold the from all the sides.
3. Just Egg Frittata
Make sure to use an oven-safe frying pan for this recipe. After the veggies have sauteed, just add the Just Egg mixture into the same pan. Add the entire cup of mix all at once Let it cook on flame for 5 minutes and then finish the recipe in the oven. You will have a vegan green bean and onion frittata.
Tips and substitution
- Use a 9-inch nonstick frying pan for this Just Egg omelette recipe. (the top width of the pan should be 9 inches. At the base it would be around 7 inches) This recipe will make 2 such omelette. But if you are using larger pans, you might want to make one single big omelette or double the recipe.
Also, if you are using non stick pan, be generous with greasing the pan with butter or oil.
- You can use fresh or frozen green beans. I like to use thin green beans. If you are using fresh green beans, wash them and have them ready.
- If you do not have red onions, substitute them with yellow onions.
- Substitute vegan butter with vegetable oil of your choice.
- If you do not want to use cumin, substitute it with minced garlic.

Yes, it does contain soy. It has soy lecithin and the ingredient label mentions that it contains soy.
No, Just Egg cannot be eaten raw. People often eat raw chicken eggs, which is also not safe. According to CDC, raw eggs may contain salmonella, which can make you sick.
Just Egg mainly contains mung bean paste. Mung bean (Moong) is the safest bean to consume raw as it does not contain lecithin and trisaccharides. It simply means that it is easier to digest raw and does not cause bloating, like most other legumes.
But eating raw Just Egg is not a good choice. It is raw bean paste, which first, does not taste good. Secondly, it contains many other Just Egg ingredients which may or may not be safe to consume raw.
So, I would recommend against it.
Unlike the chicken eggs, Just Egg comes in a ready-to-use mixture. There is just no need to whisk Just Egg. But numerous egg substitutes come in powder form and require hydration, mixing, and sometimes even whisking.
But to our relief, Just Egg is an ultimate ready-to-use Plant-based, non-GMO egg substitute.

- 1 cup just eggs
- 200 g Green beans I used extra fine
- ½ Red Onion Thinly sliced
- 2 ½ tablespoon vegan butter divided ½ tablespoon for frying the omelet

Instructions
Step 1 Prep vegetables.
