Just egg Omelette

This Just Egg Omelette is one of my favorites Just Egg recipes. This omeletee is a real thing. It has the taste, texture, and aroma of a real chicken egg omlete. This healthy plant based vegan omelette with green beans and caramelized onions folded inside, is sure to become your favorite breakfast recipe.

Equipment

  • 9-inch nonstick frying pan

Ingredients
  

  • 1 cup just eggs
  • 200 g Green beans (I used extra fine)
  • ½ Red Onion Thinly sliced
  • 2 ½ tablespoon vegan butter divided (½ tablespoon for frying the omelet)
  • 1 teaspoon cumin seeds
  • 1 teaspoon salt divided (¼ teaspoon for adding to Just Egg)
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon chili powder (optional)

Instructions
 

Step 1 Prep vegetables.

  • Start by slicing the onions. Also, wash and cut the green beans if using the fresh ones. Remove the Just Egg from the fridge.

Step 2 Make the vegetable filling

  • Heat a 9-inch frying pan on low flame. Then add vegan butter or cooking oil (retain some for omelette).
  • When the butter melts, add cumin seeds.
  • Once the seeds start to sizzle, add sliced onions. Stir and let them cook for a minute or so.
  • Then add the green beans and stir.
  • Sprinkle salt, black pepper, and chili powder and mix.
  • Let them cook for 4-5 minutes while stirring occasionally.
  • Turn off the flame and remove it onto a plate.

Step 3 Make a folded omelette

  • In a small bowl add 1 cup of Just Egg. Add salt (or black salt) at this stage and mix well
  • In the same pan add the retained vegan butter ( or vegetable oil). When it melts, lift the pan and swirl it to spread the butter all around the pan.
  • Now add half of the Just Egg mix (½ cup) to the frying pan. Then, swirl the pan to spread the mixture evenly.
  • Let it cook for 6-7 minutes at low medium flame until it becomes dry at the top.
  • When the omelette seems cooked through, add sauteed green beans and onion. Fold over and remove onto a plate.
  • Then repeat this step to make another omelette.
  • Serve hot and enjoy!

Notes

  • Use a 9-inch frying pan for this recipe. (the top width of the pan should be 9 inches. At the base it would be around 7 inches) This recipe will make 2 such omelette. But if you are using larger pans, you might want to make one single big omelette or double the recipe.
  • You can use fresh or frozen green beans. I like to use thin green beans. If you are using fresh green beans, wash them and have them ready.
  • If you do not have red onions, substitute them with yellow onions.
  • Substitute vegan butter with vegetable oil of your choice.
  • If you do not want to use cumin, substitute it with minced garlic.
  • If you want to make it eggier, add ¼ teaspoon black salt per 1 cup of Just Egg mixture.
  •  Add a pinch of baking soda and flour to make it fluffier.
  •  Grease the pan nicely all over if you want a perfect omelet. You can use cooking spray also.
  •  Let the omelet cook at low medium heat. It takes much longer than the chicken egg. Do not expect it to coagulate and cook as fast as a chicken egg. It takes time. Do not try to flip the omelet until it is fully cooked.
