Til Laddu with jaggery or Sesame Ladoo with Jaggery, are the same. In common parlance, we call it Til ke Ladoo. These Indian desserts are specifically made during this time of the year to celebrate a series of festivities throughout the Indian Sub-continent.
Though it is celebrated in different ways around the country, Til or Sesame based sweets are a common link.
In north India, we celebrate this time of the year as Lohri. Lohri marks the end of winter and is a traditional welcome of longer days and the sun's journey to the northern hemisphere.
It is observed the night before Makar Sankranti, which typically falls about the same date every year.
Yes, you got it right. This is the only Hindu festival that falls on the same date every year. 13 January!
The southern states celebrate it either as Pongal or Sankranthi. These Til Gur Ke Ladoo are called Nuvvula Ladoo in Tamil. Nuvvula means Sesame in Tamil.
Well, I guess we got enough background here. Now let us begin with the recipe.
Ingredients for making Til Laddu with Jaggery
This is a very straight simple recipe. This is how my mom has been making it for years. It is just Sesame seeds, some nuts, and Gur ( Jaggery).
If you want to make it more decadent add some khoya. I often make Khoya Til Laddo. But let us leave that recipe for some other day. Today we will do a simple basic Til Laddo recipe.
Til/ Nuvvula/ Sesame Seeds
I am using brown sesame seeds in this recipe. Though white or black or a mix of all would work equally well.
Apart from being a good source of fiber and plant proteins, sesame seeds have numerous other health benefits. They are known to lower Cholesterol, Triglycerides, blood pressure, and support healthy bones.
The only reason to list all these benefits is to make sure that you enjoy these treats guilt-free.
Gur/ Jaggery/ Gul
Yes, no refined sugar in this one.
Traditionally fresh Gur/ jaggery is made around this time of the year in Punjab and adjoining states. And Til ke Laddu were made with that fresh Gur/ jaggery.
Well, we siting here, miles away can only dream about fresh Gur.
But we can definitely make these Nuvvlla Laddo treat ourselves.
Nuts
I am using some coarsely chopped nuts. I have given a quick pulse to some almonds, cashew nut, and pistachios. Also, I am adding 2 tablespoons of desiccated coconut. Coconut and sesame work so well together.
So let us start making these refined sugar-free treats with sesame seeds.
Procedure to make Til Laddu with Jaggery with Step by Step images
- Measure the ingredients and coarsely blend or chop the nuts of your choice.
2. In a pan dry roast sesame seeds and chopped nuts till they become aromatic.
3. Now into a pan add jaggery and water.
4. Let it cook at low flame for 3-5 minutes while stirring regularly.
5. Cook until the mixture becomes super foamy and you start to see big bubbles.
We need to cook until the syrup reaches the soft ball consistency. To check if the syrup is ready or not. Take a drop of syrup and add to a small bowl of cold water. If the syrup forms a softball and kind of retains its shape in the water, the syrup is ready.
6. Try to be quick after this point. The syrup will start to brown very soon. So dump in the sesame seeds and nuts mixture and turn off the flame.
7. Mix the sesame seeds/ Til in the syrup and remove the pan from the flame and place it on the kitchen counter.
8. Take a bowl of cold water and wet your hands a little bit. Start making Til Jaggery Laddu by taking a little amount in your hands and pressing it between your fingers to form round Ladoos.
If your hands get sticky or sesame seeds start to stick to your hands dip them in the bowl of cold water and continue.
Incase, the mixture becomes hard, place the pan back on flame and heat for a few seconds and quickly remove from heat and make the rest of the laddoos.
Store these jaggery Til Ke Laddu in an airtight container and enjoy for weeks.
